The executive chef, Mohamad Juzaili Shah Abdoll Rani, and his culinary team have prepared a comprehensive variety of local traditional cuisines to whet your hunger with their 22 years of culinary experience. The primary highlights of Selera Ibunda’s are six main mouth-watering dishes.

SUP GEAR BOX

First up is the ever-popular Gear Box Soup or Sup Gear Box, one of the mouth-watering and favorite dishes in Malaysia. The bone marrow soup is simmered with onions and other rich spices for more than 12 hours to soften the flesh and cartilage. The soup is rich and thick in flavor, almost tasting like a stew. Perfect with steamed rice or bread, this is a hearty dish that will definitely warm your stomach and fill you up with satisfaction.

DAGING TETEL GULAI KAWAH

Gulai is a robust Malaysian curry that is especially popular for occasions like weddings or festive occasions. With its thicker, more milky yellowish gravy texture, the curry is rich in spices such as turmeric, coriander, black pepper, galangal and other traditional herbs. Cooked in a huge wok over open flames, this method of cooking is called kawah which allows for bigger portions to be cooked at any one time. Commonly found in Malaysia and Indonesia, this dish is best served with white steamed rice and ulam-ulaman.

KAMBING MASAK HITAM

Kambing Masak Hitam is a perennial favorite and a must-have dish during Buka Puasa. Commonly found in every state in Malaysia, its name comes from the shiny black sauce that offers a combination of sweet and spicy flavors. Marinated with traditional herbs and spices for a few hours, the lamb meat is then simmered with dark soy sauce for a full and umami-rich flavor that will leave you craving for more.

DAGING SALAI MASAK LEMAK

Daging Salai Masak Lemak holds a special place in many of our hearts. This renowned spicy coconut enriched gravy originated from Negeri Sembilan. Salai is a special cooking method used for many generations to prepare this dish and involves smoking the beef before braising it in fresh spices. Usually served with hot steamed rice and salted egg, this is a perpetual favorite dish for those who love a spicy kick to their food.

UDANG GALAH ASAM PEDAS

An extremely appetizing dish, Udang Galah Asam Pedas originated from Malacca and contains a slightly sourish taste that comes from the use of sour tamarind (boiled until soft and squeezed into a juice). Fresh chili peppers are added in as well, giving the dish a tangy, spicy flavor. Combine these simple ingredients with freshwater river prawns and you get a dish that cannot be missed.

KARI KEPALA IKAN

An all-time favorite, Kari Kepala Ikan is a mouth-watering dish that is hard to pass up. One of the most sought-after dishes in Malaysia, it is commonly found at many Indian Muslim restaurants. This delectable dish consists of ingredients such as turmeric, coriander, black pepper, ginger and much more. The gravy is slightly thick and filled with flavor that leaves a long-lasting impression on your tongue. Chunky pieces of fish from the fish head of the red snapper or garoupa adds the finishing touch to this unforgettable dish. Once again, served with hot steamed rice is the best way to savor this dish.
